Crispy Beet Prailine
The soft shimmering lines play contrast to the multi-textured interior of this one. Fable Farm Vanilla Candied Beets and coarsely ground Hazelnut Prailine is folded into Organic Milk Chocolate and Crunchy Feuilletine, Roasted Cocoa Nibs and Sea Salt are added for a deep dark not-too-sweet chocolate experience.
P B & J, My Way
One of our signature chocolates with ever changing flavor combinations. This one has Smooth Vermont Peanut Butter kissed with Organic Milk Chocolate under a Layer of our House Made Garden Nasturtium -Strawberry Jelly.
It's all wrapped up and in a crisp shell of Organic 74% dark & 42% milk chocolate from the Dominican. Reminiscent of a childhood favorite, but much more addicting, and much more appreciated when given as a gift.
As the signs of Winter melt away, we decided to offer up the last few jars of our Raw Honey from our friend Todd Hardy at Caledonia Spirits; it has been infusing with organic Tangerine for most of the winter and is quite potent. After working in some Bee Pollen from Honey Garden Apiaries, its then molded in a shell of Wild Harvested 68% Bolivian Dark Chocolate. The finished bon-bon has a carmel consistency with big floral notes and a clean fruity finish, and hey, its good for you too ! It might not be a signature of Spring, but its a sign that our Winter's coming to an end and the Bee's will once again take flight.
Vermont Maple Rum Raisin
While it might be Spring most everywhere else, snow still graces the ground in a good bit of Vermont, and this one pays homage to the sap that flows through the Green Mountains. We've taken our own Estate Maple Syrup, Local Cream and Butter, an Organic Vanilla Bean and a Healthy dose of Dunc's Mill VT Maple Rum and cooked it into a soft Gooey Carmel, studded with a few Rum Soaked Organic Currants and set in a shell of Organic 74% Chocolate from the Dominican Republic. Smoky, fruity, nutty and a touch of rum, just what we need to get through a Vermont Mud Season !
